THE FACULTY

DR. ENCARNA AGUAYO.

Dr. Encarna is an Agricultural Engineer and a Professor of Engineer in the area of Food Technology at the Polytechnic University of Cartagena, Spain. (UPCT) She is also a Director of the UPCT-Marnys Business Chair, Head of the Food Quality and Health Unit of the Institute of Plant Biotechnology of the UPCT and a member of the Post-harvesting and Refrigeration Group. She is a specialist in post-harvest technology, fresh processed products and the implementation of emerging technologies for the maintenance of bioactive compounds, control and regulation of the general horticultural metabolism, with impact on quality. In addition Dr. Encarna is very involved in the search for new uses for agri-food bio-waste, particularly in an overpopulated world where a third of all food produced for human consumption is thrown away every year. This concept of circular economy has her to found the technology-based company (EBT), BIODIVERSO (www.biodiversocosmetic.com), whose objective is the development of natural cosmetics from fruits, vegetables and their by-products, enriching and nourishing the skin with bioactive compounds present in these products.

DR. GINÉS BENITO MARTÍNEZ HERNÁNDEZ

Dr. Hernandez is an Agricultural Engineer, and an Associate Professor in the area of Food Technology at the Polytechnic University of Cartagena (UPCT). He holds a PhD in Advanced Techniques in Agricultural and Food Research and Development. He is an expert in nanotechnology applied in advanced food preservation and packaging systems, development of new foods and use of eco-sustainable technologies to obtain healthier and safer food for the consumer.

Dr. Fuensanta Morales Illan.

Dr. Illan is a Professor of Economics in the Department of Fundamentals of Economic Analysis at the University of Murcia. She is a PhD in Economics from the Autonomous University of Barcelona. Dr. Illan specialises in Economic Growth, Innovation, International Economics and Foreign Trade.

Dr. Mari Carmen Ballesta

A PhD in Biochemistry, Dr. Ballesta is an Associate Professor at the Polytechnic University of Cartagena. She did a 2-year postdoctoral stay at the University of Leipzig (Germany). She rejoined the Centro de Edafología y Biología Aplicada del Segura (CEBAS-CSIC) from 2004 to 2019, and is an expert in plant water and nutrient transport, aquaporin regulation and plant response to abiotic stress conditions. Since 2019 Dr. Ballesta has been an Associate Professor at the Polytechnic University of Cartagena where she studies the relationship between water transport and secondary metabolism involved in plant defense against pathogens in brassicas.


The University Polytechnic of Cartagena has several faculties that have existed in various forms since the 19th and early 20th century. In its present form the Polytechnic University has existed since 1975. The School of Agricultural Engineering was established in 1983 and has some of Europe’s finest professors.

It is from this school and other research centers of excellence around Murcia in the Iberian peninsular that global businesses have been formed to make this one of the most advanced and innovative Agricultural regions in the world. The University is one of the eight holders of the European Universities of Technology.
